It’s pumpkin season! Time to bring out all the pumpkin recipes for your meals. Today’s main course – pumpkin za’atar with butter garlic sauce – came about by sheer serendipity. I had a pumpkin, I had some za’atar, and I realize this is starting to sound like PPAP so I will pause here to tackle first things first: “What’s za’atar?”

“If you don’t know what to do with it, boil it” is a mantra that serves me well with unfamiliar vegetables. Chayote (or chow chow as they call it where I live) has long moved out of the *unfamiliar* category for me, and yet, the decision to boil the chayote brought with it an unexpected benefit – it simplified the task of peeling its creased, curvy skin.

This chayote / chow chow raita recipe leverages on that goodness of boiling. Fresh seasoning and a spice-infused tempering give the raita a robust kick of flavors.

Bathua is in season for only a short while each year, and when it is, it is abundant and inexpensive. Make the most of it while it lasts – and if this wonder vegetable is new to you, kick off your acquaintance by making this popular north Indian side dish: bathua ka raita.

Grated white radish seasoned and stuffed in flat-bread, pan fried with ghee. Mooli paratha is a delicious wholesome meal, perfect for brunch.

There are two schools of thought on how the filling for mooli paratha should be prepared: the first camp sautés the grated radish before using it for stuffing, the second camp keeps it raw. This recipe gives you my preferred method – the raw.

Moong dal pairs well with gourds: my much-clicked recipe of ridge gourd moong dal is ample proof of that. This recipe combines moong dal with another similar gourd – the zucchini – with some green leafy goodness added to the mix. It’s homey, light and lemony, the kind that inspires coinages such as “comfort food”.
