Not all experiments pass muster the first time. A few go through rounds of trials before they reach publicly sharable shape. A few are embarrassments best shelved forever (I’m thinking of you, curdled strawberry yogurt). Lachha gobhi paratha, I’m delighted to report, was a stupendous success from the word go.
Chaat Masala
Cucumber Pomegranate Salad
A bright side dish to perk up your mealtimes. Cucumber and pomegranate are loaded with antioxidants, and when they come together, they make a salad that’s the very definition of healthy gorgeousness.
Rajma Chaat: Kidney Bean Salad
Rajma masala giving you the same old same old vibe? Try something different with rajma (kidney beans) this time – something that is quicker to put together, that works wonderfully as a teatime snack or lunchtime salad. Try rajma chaat.
Anari Aloo: Potatoes in Pomegranate Reduction
No, this is not a recipe for silly potatoes. The anari in the title is अनारी not अनाड़ी , which implies ‘flavored with pomegranate’. I’m especially thrilled to share this recipe of anari aloo with you as it was something of a shot in the dark for me – I had no precedent or inspiration, and only followed a hunch that this way of pairing fresh pomegranate with potatoes would work.
Did it work? You bet it did!
Papaya Peanut Salad
I make this papaya peanut salad when the fruit is somewhere between green and yellow, having a hint of sweet but still crunchy. A light dressing works well when the papaya is at this stage. No garlic or strong sauces, more fruity goodness.
