Ridge Gourd Tomato Curry

I discovered ridge gourd only after moving to south India. The first time that I bought this vegetable, my motivator was curiosity – I had no idea how this sponge gourd / bitter gourd lookalike would be cooked or how it would taste. Pushcart vendors outside my apartment stocked fresh ridge gourd in large inviting heaps. One day I walked up to a vendor and asked in gestures (I did not know Kannada) to name the vegetable. In response, he wrapped two ridge gourds, held out the package to me and named the price.

And so I returned home, ridge gourd package in hand, and typed into Google image search: "long green Indian vegetable with spikes". Google did not disappoint – I found not just the name but also many ways to cook ridge gourd.

Red Pumpkin Curry

Curry Leaf Pulao

Seeing that a nutty ingredient does a great job of taming the bitter notes of other ingredients (think curry leaf peanut chutney or sesame fenugreek chutney), I dared to make a rice dish seeped in curry leaf, with a load of cashews for good effect. And I loved the result.

Curry Leaf Poppy Seed Chutney

Fresh curry leaves coax you to use them all up before they start to dry, but there is only so much you can add to tempering. How do you make the most of a fat bunch of fresh curry leaves? If you ask me, I’d say make chutney.

Curry leaves and peanut chutney is the recipe I usually turn to, but I tried out an unusual combination this time – a recipe that adds a touch of sweetness to offset the bitterness of curry leaves. With extra notes of nuttiness from poppy seeds and tartness from tamarind, this curry leaves and poppy seed chutney is a one to add to your cherished family recipe handbook.

Meethe Chawal: Jaggery-Sweetened Rice

Every time I watch a rerun of Sooryavansham on TV (laugh if you will, I enjoy that film) I am struck by the scene in which Radha covers up for the lack of supplies in her kitchen by preparing meethe chawal. Celluloid can inspire us in unexpected ways, as this post is proof. My story may not be as dramatic as that of families reuniting tearfully after watching Sansar (a real effect of the film in the year of its release, I’m told), but it’s still worth telling for those in a culinary quandary similar to mine.

Gur Atte Ka Halwa: Jaggery and Whole Wheat Flour Halwa

I got up this Sunday morning with a halwa craving, fondly remembering the sooji ka halwa my mom used to make on weekends. There was no sooji (semolina) in the pantry to recreate her recipe, so I turned internet-wards for recourse.

The recipe for gur aur atte ka halwa (jaggery and whole wheat flour halwa) on Divine Taste struck an instant chord: the pictures were mouth-watering, and the key ingredients – whole wheat and jaggery – were healthy substitutes (well, more importantly, available with me!) for semolina and sugar.
