Easy Cheesy Zucchini

This zucchini recipe is a savior on busy workdays when there’s no time to craft an elaborate meal. Cooking with zucchini takes no effort at all – it’s easy to chop (compare it to its cousin the ridge gourd – all that peeling!) and quick to cook. Served on the side with hot chapatis, easy cheesy zucchini makes for a filling and comforting vegetarian meal.

Jaggery may come from the same source as white sugar – sugarcane juice – but it’s miles ahead in terms of nutrition. The process of refining strips white sugar of sugarcane’s mineral contents, while the simpler method of jaggery-making retains them.

Every time my mom makes spinach raita when guests are over, she is asked what went into the dish and how she made it. Sure to be followed by incredulous expressions when she lists out a mere five ingredients and two steps. Nothing that tastes this good can be so easy!

Buttery Brussels Sprouts

I never knew what Brussels sprouts were in my growing up years. My first sight of this vegetable was during a work assignment in UK. They were served at a party steamed whole, and their appearance had me entranced. If Gulliver’s Lilliput land cultivated cabbages, this is how they would look.
