Patta Gobhi Paratha: Cabbage Paratha

Here’s a way to sneak in some cabbage goodness into your meals, without cooking up a full-blown cabbage curry: make patta gobhi paratha / cabbage paratha. With a generous spiking of cabbage (patta gobhi in Hindi) and spices, this wholesome pan-fried flatbread is a satisfying meal on its own. With chutney or pickle on the side, cabbage paratha is just the thing for a weekend brunch or a lunchbox treat.

Authentic Sattu Paratha: Bihar’s Famous Stuffed Flatbread

Till about a decade back, a mention of sattu in conversation with a non-Bihari audience would be greeted with puzzled stares. Things have changed today. The world around is more health-conscious, and sattu has gained currency for its great nutritional benefits. Rich in minerals, proteins and fibre, low in glycemic index – sattu is a great addition to one’s diet.

The better-known style of consuming this miracle food is probably in the form of a cooling sattu drink, but my favorite way is as sattu paratha (also called “makuni” colloquially) – flatbread stuffed with a spiced sattu filling.

Bread Upma

Traditional cooks who, when prompted upma, say “semolina” in a word association game, will probably raise quizzical eyebrows at this recipe. Upma without its core ingredient! No doubt the brainchild of someone with a large loaf of bread on hand along with a batch of tomatoes and an allergy to sandwiches. Bless the sandwich-hater for this brilliant recipe – "bread tomato upma", the nicest way to use bread when it’s best-before date has arrived.

Paneer Bread Roll

Paneer bread roll, pan-fried and served with red chili sauce. While mom made these, I did nothing this morning except click pictures and eat :-)

Bread rolls are generally deep-fried; this shallow-fried version is lighter and saves on the oil.

Paneer Sandwich – Easy Toasty Breakfast

Paneer Sandwich

One of the nicest ways of using fresh paneer (cottage cheese) is in a toasted sandwich. If you have an electric sandwich toaster, that would come in handy at breakfast time. If no toaster around, no worries – you could grill your paneer sandwich or cook it in a non-stick pan on the stove top.
