Patriotic Raita for Indian Independence Day
13 Aug
15th August is just round the corner. To celebrate India’s Independence day, let the tricolor inspire our food. Here’s an idea in saffron, white and green – a patriotic raita.
You Need:
- Plain yogurt – 2 cups
- Carrots – 2, medium
- Coriander – 1/2 bunch
- Green chilly – 1
- Raisins – 1 tablespoon
- Salt – 1/3 teaspoon
- Sugar – a pinch (optional)
- Roasted cumin powder – 1/3 teaspoon
How To:
Whisk yogurt with salt and sugar till smooth.
Wash, scrape and grate carrots.
Wash and chop coriander and chilly finely.
Assemble the raita to resemble the tricolor:
Spoon the whisked yogurt into a flat container, preferably a rectangular one (length: breadth = 3:2).
After the yogurt has settled (about 20 minutes), sprinkle grated carrots over the top third of the yogurt base and grated coriander over the bottom half of the yogurt base.
Sprinkle roasted cumin powder in as close a shape to the Ashok chakra as you can manage. [I was too impatient to try this step out, made do with a cross.]
Serve with rice, dal and curry. Happy Independence day!

Ah! So easy and pretty! Would go really well with those palak or rajma parathas :)
Oh yes, this raita can totally hold its ground with brightly colored parathas :-)
