Sattu Paratha: Stuffed Flatbread, Bihar Style

Till about a decade back, a mention of sattu in conversation with a non-Bihari audience would be greeted with puzzled stares. Things have changed today. The world around is more health-conscious, and sattu has gained currency for its great nutritional benefits. Rich in minerals, proteins and fibre, low of glycemic index – sattu is said to be the most economical antidote to diabetes.

The better-known style of consuming this miracle food is probably in the form of a cooling sattu drink, but my favorite way is as sattu paratha – flatbread stuffed with a spiced sattu filling.

Gur Atte Ka Halwa: Jaggery and Whole Wheat Flour Halwa

I got up this Sunday morning with a halwa craving, fondly remembering the sooji ka halwa my mom used to make on weekends. There was no sooji (semolina) in the pantry to recreate her recipe, so I turned internet-wards for recourse.

The recipe for gur aur atte ka halwa (jaggery and whole wheat flour halwa) on Divine Taste struck an instant chord: the pictures were mouth-watering, and the key ingredients – whole wheat and jaggery – were healthy substitutes (well, more importantly, available with me!) for semolina and sugar.

The Taste of Aloo Parathas without the Hassle of Stuffing

Learning how to make stuffed parathas wasn’t exactly a cakewalk for me. Most often I would go overboard with the filling and the paratha would crack open while rolling, leaving a messy spill. To counter that, I would fill so little that only superactive taste buds could tell there was actually something between the layers of atta.

One day, quite by accident, I discovered this pleasing middle ground – aloo parathas without stuffing. Sharing my method here. I’m sure this will help the novice paratha rollers among you.
