I wanted to make a paneer dish taste close to ‘paneer butter masala’ that we get in Indian restaurants. Here is what I came up with. This rich curry is a great hit with paneer lovers, something you can happily serve at a party.

Mango Phirni

A summertime favorite inspired by a recipe I saw on the TV show Turban Tadka. Mango phirni gives a seasonal twist to the conventional rice phirni. Serve it in silver bowls for a classic feel, or layer it in glasses western-style with nuts and mango pulp.

Spinach Cheese Pasta

I love spinach no less than Popeye and cook it in a variety of ways. Other than my Indian recipes (spinach toor dal, aloo palak, palak paneer are special favorites), I love to cook pasta with spinach as its prime ingredient. Here’s a simple spinach cheese pasta recipe.

You Need:

  • Pasta – 2 cups (I used fusilli pasta)
  • Onion – 1, finely chopped
  • Spinach leaves – 2 bunches, cleaned and stems removed
  • Cream – 1 tablespoon
  • Milk – 1 tablespoon
  • Cream cheese or spreadable cheese – 1 tablespoon
  • Salt – to taste
  • Oil – 2 teaspoons
